Dr. Heather Carpenter is a lecturer at University of Portland

Dr. Heather Carpenter is a lecturer at University of Portland and lives on a small farm where she raises most of her family’s meat and vegetables. She teaches environmental science and a sustainable food systems course called the science of the sustainable gourmet. Dr. C dreams of a time when she can separate her family from the industrial food system (dairy and grains…) and loves to share her journey with students.
